I would like to use chromium, but I have a bunch of setting in Chrome
(passwords, cookies, etc) that I would like to transfer from chrome to
chromium. How do I do it?

Personally I would use google search to get whatever commands to
export desired data, then search to get import commands.

Which is how I found https://askubuntu.com/questions/89567/how-to-import-chromium-browser-data-to-chrome
assuming the reverse procedure works or go by
https://www.reddit.com/r/Chromium/comments/6rh2de/any_way_to_easily_migrate_to_chromium_from_chrome/
assuming that 5 year old procedure still works.

First I'd make a full backup of that user's home directory after rebooting and
logging in as another user to ensure no open files, just in case it doesn't work.

Just in passing, I have found most answers in one of the Ubuntu forums.
Or, for anything command line, Arch Linux has a very full manual. Linux
Mint needs to be used with caution, because it is extensively modified
to make everything work smoothly.
